to make a taco you need a tortilla we already know this but in today's video I'm going to show you all how to take your tortillas up to a whole other level and in doing so we're going to be making some crao that basically translates to cheesec crust and it's an easy recipe that adds a gooey cheesy bite that's packed with texture and flavor now one of the most common ways to make a costra is to pile on a lot of cheese onto the Plancha and then once it's crispy on the bottom place your tortilla or Tada onto
the melty cheese on top and flip that onto a plate and fill it up with goodness in some cases people even use this cheeser crust as the tortilla in and of itself now here's how I'm going to do it so let's get fired up and make some CRA quo boom let first thing I'm going to do is I'm going to grate some cheese here I have this Waka style cheese Gua Waka is a melting cheese if you don't have that in your area you can use montere Jack or mozzarella pretty much any melting cheese will work up
next we're going to do our Longhorn style cheddar cheese today I'm doing the uh cheddar mainly just to show you guys that it works with more than one kind of cheese I'm going to slice some limes here I personally like to slice them like this this is a milanesa which is basically Chuck meat I'm just going to slice it real thin here now as opposed to normally we want our gdle screaming hot really you just want a nice medium hot temperature on your griddle when you're going to do Costa like this I'm
going to put a little bit of oil on here just to keep it nice and Slick I'm also going to t a couple of Tano Peppers cuz I like a little heat and everything even my breakfast cereal just kidding not a whole lot to this you're pretty much just going to take some cheese and drop it on here how big you want your tortilla is going to determine how much cheese you want to put on here you want to lay it down right here just like that it doesn't have to be super thick remember this is tortilla uh thickness
not anything beyond that so we're going to get a couple of them going right here and you just want to spread it out just like that Pat it down a little bit four burners on this griddle these two are on this one in the middle right here is completely off and I can see it's starting to get a little bit of costra there already I'm want to press that down make sure it kind of Blends in with the rest of it it's starting to bubble and Sizzle a little bit and you see there's plenty of heat in between these
two burners it's actually just perfect to make the Costa you don't want the fire too too hot cuz it'll burn a lot quicker on the bottom give it a little time be patient and it'll be just right now most of the time I see a lot of cooks don't flip this at all they basically just take it out put it on the plate and assemble a taco of some sort start warming up my meat so that we can have some nice warm protein to put onto our Costa tacos and it's looking pretty good you see how it kind of spreads out
as it melts just let it cook let it cook let it cook it'll be a okay this one's cooking a lot more on this side than on this side where I was a little further away from the heat that's way over here I went ahead and turned on this burner that's directly below here just to try to even out the heat so here's one we've got one let's get it onto the plate really quick we're going to fold these over nice and crusty that looks pretty good to me while that's cooling off just a little
bit I'm going to make another one of these here we're going to make these a little bit smaller that one spread out pretty good made a nice big tle pile it up right there in the middle as it melts it wants to go to the sides boy that's why it's called costra it's a crust let's put some meat in here I don't know if I got enough meat for this one we might run out of meat here nice and crusty maybe a little well done it's okay I like Well Done cheese anyway we going to take a little bit of cilantro
little bit of diced onions little squeeze of lime yeah buddy this Sano pepper right here one two ha we have two crao tacos here and two more on the way let's take a quick bite of this one M even the Thunder wants some costra you get a really good cheese flavor it's almost like a smoky cheese cuz it got a little toasty on it the texture is great you get the meat in there and the cilantro and the onion gives you a little crunch lime has a little tartness in there it's just really really great super delicious we
got two more coming out I'm going to lay this down right over here this one's beautiful we're going to fold that over I'm going to lay these over here and let them cool off a little bit we're not done yet we have two more with a guess Waka going over here let's get a couple of these cheddar going while those are cooking I'm going to go ahead and warm up a couple of tortillas too give them a little flippity flip here get them a little bit of oil on here the oil help the tortillas stay together they don't
crack they don't crumble they don't fall apart you notice that the cheddar cheese has more oil than the gahaka cheese you can see that oil really just literally coming out of that cheddar cheese remember what I said the whole secret is patience you got to let it be ready you can't hurry it too much got to wait till it is ready to slide this one's almost there sometimes you just kind of have to go all the way around a little at a time there we go look at that now we're going to take one of our tortillas we're
going to flip that one over onto the plate here just like that isn't that pretty now we're going to take some more meat again put this right here in the middle we're going to take a tortilla on this one too cuz it looks so pretty and we're going to lay that one on our plate over here too she look at that beautiful my wife wanted some pickled onions that she herself made so we're going to give her this one little cilantro pamari there you go babe come get it and it has started to pour rain out here here's
keso Costa number two this one's with yellow cheese this one is K aaka we're going to put some Sano in this one too this one will be mine cilantro onions and why not more onions as the kids today like to say shees I'm putting salsa on here I'm going squeeze a little lime on here I'm ready to take me a bite this looks delicious nice and crunchy mhm man all I can say is wow a lot of things going on here we have a delicious corn tortilla wrapped around some nice melty queso costra some Crush
cheese adds a lot of flavor have some delicious BC meat in there seasoned with some OG then we have some pickled purple onions that my wife made I mean on the money a little bit of paa salsa that we made earlier I mean this is just like this is a bite from Heaven man this is this is good all right friends we're going to wrap it up have a real bad rainstorm coming through here this is delicious hope you guys enjoyed this video we'll see you guys at the next one if you like the video hit the like
